How to shop for eggs

The Department of Agriculture compared conventional eggs with pastured eggs to find that pastured eggs have: 1/3 less cholesterol, 1/4 less saturated fat, 2/3 more vitamin A, 2X the omega-3 fatty acids, 3X the vitamin E, 7X more beta carotene and up to 6X more vitamin D. Pastured chickens literally live outdoors, eating a natural diet of insects, worms, seeds and grass – humanely raised with plenty of sun, fresh air and space to roam. However, the term “free-range” can simply mean a chicken has access to a limited outdoor space to stroll around a concrete slab for a few minutes a day. Cage-free chickens are merely squeezed into an indoor room. Omega-3 and DHA eggs are usually factory raised – living indoors and caged – but their feed is “enriched”. Organic eggs are from hens not treated with hormones or antibiotics and the feed is organic. We won’t even bothering covering conventional eggs here…
